WHO ARE THE CHEFS?

A creative and seasonal cuisine

Drawing on a rich career, Gabriel Degenne is passionate about gastronomy and enjoys sharing the classics of French cuisine with his guests. Having bathed in the world of catering since childhood, Gabriel Degenne later travelled through cities and regions to finally secure his first position as a chef on the Côte d’Azur. Ever since, sharing a wide array of products as well as his love for medditerranean cuisine has been his passion. As the executive chef of restaurant l’Emblème and the Mouratoglou Hotel & Resort since 2019, Gabriel’s cooking is the promise of a refined culinary adventure that evolves according to seasons.

EXECUTIVE CHEF

A native of Nice, where he originally learned the art of pastry-making, Olivier Marro is a passionate chef who likes to share his talents. Named best apprentice in the Alpes-Maritimes region as a young man, he later apprenticed with Jacques Fourmont (Best Craftsman of France 1979), then became the pastry chef for the Martinez hotel in Cannes, then the Beachcomber French Riviera. Every day, Olivier Marro and his assistant Victore Danes whip up their latest creations for the restaurant and any private events held at the hotel. These creations delight the eyes and taste buds of anyone who appreciates in-house pastries that change with the passing of the seasons.
